I'm truly amazed at how well he uses the computer, but I get that we need to find the simplest possible way for him to accomplish something, and once we've found it, don't change it. I didn't say he understood the difference between programs, files, desktops, folders, etc. (I said he's been using computers for 25 years. But that process gets my father-in-law confused. I KNOW the workaround is to scan to a file, open an e-mail message, click on the paperclip, navigate to the scan, and attach it. Put another way: When the printer sends a message to the computer to create a new e-mail message, what is it calling for?

I'm guessing there's some registry item I need to edit - maybe "OUTLOOKMAIL" or "MS-UNISTORE-EMAIL" which both seem to be associated with Windows Live Mail? Or something else?
